Not at all what I expected but perhaps better…. One of the most thought provoking recipe books I own

I was excited to order this book because I hoped it would inspire me to cook quick and healthy mid-week meals. I’m good at cooking quick meals mid-week but sometimes their nutritional value is questionable!

Turns out I should have read a little more into what the book was about before ordering, Hugh explains in the introduction that when he refers to ‘Light and Easy’ it’s not necessarily about quick and low calorie recipes, but instead more about eating better and cutting down on certain things a lot of us will likely consume too much of (mainly wheat and milk). The ‘easy’ references straight forward recipes that aren’t ‘faffy’ or too involved. So whilst you might be macerating something or marinating, you’re free to do other things, so recipes aren’t necessarily quick but they are easy.

At first my heart sank because the book was not what I anticipated… but then reading Hugh’s introduction actually spurred me to cook from it.

I have posted a full recipe list at the end of this review to help you decide in your purchase, and any questions please post them as a comment and I will try and answer as soon as I can.

The book is split into 9 recipe sections with an introduction (which I highly recommend you do read before doing any recipes) and also a final section on ingredients which describes some of the things that have become ‘essentials’ in Hugh’s kitchen since cutting down on wheat and dairy, again definitely worth a read before heading to recipes sections if you can.

I just wanted to list a few things I really LIKE about the book:

- It makes you think about your diet, not in a preachy way but in a positive “choose something better” kind of way which is quite inspiring
- It contains some fantastic photos - every recipe has at least one inspiring image, it’s a joy to flick through
- Every recipe also has a detailed method leaving you in no doubt of what to do and an introduction from Hugh to give it context
- The quick reference symbols that can accompany a recipe are very handy, these are:
-a stopwatch; means it takes less than 20 minutes to cook (apparently almost half can be done in less than twenty minutes, I have yet to verify this!)
-a box; means they’re lunchbox or thermos friendly
-a V symbol; recipes that are suitable for vegans
- There are a lot of ingredients in the recipes I have heard of but never considered cooking with, and Hugh demystifies them entirely at the end of the book in the ‘Ingredients’ section (such as coconut oil)
- The recipes I have tried so far have been true to Hugh’s word and have been easy, with one being exceptionally simple - a twist on simple breakfast Grapefruit, delicious it was too.

Whilst I COMPLETELY understand that Hugh has not set this book out to be for the calorie counters out there (my wife is proud to be one of them!), I still would have appreciated some nutritional information about each recipe. Whilst not a common thing yet in recipe books, I wish it were – but this is not a reason to lose a star.

The reason I give Hugh 4 stars instead of 5 is purely because there are probably a third of the recipes in here that are not quite to my taste, and that seems a bit harsh I know but reviews have to be opinion, so 5 star cook books for me are usually from Nigel Slater or Jamie Oliver, where a good 9 out of 10 recipes look like something I want to cook. But with Hugh sadly there are some that just aren’t to my taste, but I appreciate this is personal opinion so I do recommend you have a read of the recipe list at the end of my review.

The three recipes I have tried have all been fantastic, although admittedly one was barely a recipe (putting black pepper on my morning grapefruit, but similar to balsamic with strawberries it was a simple revelation!).

In summary this book is not at all what I expected it to be, and I think that’s actually funnily enough turned out to be a good thing, otherwise I would not have instantly bought it. But just from the two proper recipes I have tried out I feel I have taken some baby steps to improving my diet and increasing my knowledge about the food I cook with or, more importantly, don’t cook with every day. I’m not quite sure how I’ve only just discovered how amazing rapeseed oil is – and grown here in Yorkshire too so an absolute bonus!

If you’re wondering who might enjoy this book, I think it would appeal to a lot of people including those looking for a good gluten free / vegan recipe book, people who like my wife would like some quick go to recipes or simply people like me that do just love cooking and perhaps know they are consuming a little too much wheat and dairy – and would like to learn more about alternative and tasty ingredients they don’t currently use to make better everyday choices. A surprising but in the end thought-provoking, most likely life improving, good purchase.

A new favorite
By big flavors, small kitchen
I think I've now got all but one of River Cottage cookbooks, and this one has me thinking to take a trip there for one of their cooking schools. Love his philosophy, love his flavors and healthy heartiness of the recipes in this collection. I have hundreds (yes, hundreds) of cookbooks and this one is in my "use often" pile. There's always something to try, and this book introduced me to some new ingredients. All of which are available via Amazon.

Based on a decade the author spent among the African-Caribbean "Creole" people on Nicaragua's southern Caribbean coast, Disparate Diasporas is a study of identity formation and politics in that community. Edmund Gordon lived in Bluefields, Nicaragua, during most of the 1980s, a turbulent period during which he participated in the community's search for solutions to problems ranging from a crumbling economic base to the mutual mistrust and animosity between most Creole people and the Sandinista revolutionary government. Disparate Diasporas is not a conventional ethnography. Rather than being just an observer, Gordon actively participated in the life of the community, intent on contributing to its political processes. A basic premise of his book is that engagement and activity can enhance ethnographic insights and sharpen theoretical understanding. Disparate Diasporas shows how a particular "Black" community can evolve distinct types of diasporic consciousness, and, depending on the historical moment, how different types of memories, consciousness, and politics come to predominate. The author uses the Gramscian notion of "common sense" to understand the Creole community's history of shifting politics and ideologies, focusing on the period of the 1970s and 1980s. His work explains the inability of the Sandinistas to come to terms with the racial and cultural challenge to the Nicaraguan nation posed by the Creole community.

Great ethnography; useful info for activists

Well researched and full of lively detail that only ten years plus worth of in-the-field experience could command, Disparate Diasporas is a thoroughly satisfying ethnography of one of Nicaragua's least understood ethnic groups.
The book is valuable not only for its insightful ethnographic and political observations, but also for its compilation and consolidation of useful and hard to find ethnohistorical information about Nicaragua's coastal Creole populations.
Activists, scholars, and others familiar with the turbulent Nicaragua of the 1980's will find the perspective presented in this volume to be useful. While the book is not a political analysis, its description of events, and, more importantly, Creole interpretation of those events, should provide many "lessons learned" for those interested in re-evaluating what went right and what went wrong in 1980's Nicaragua.

I love this book for kids to read

I love this book for kids to read. I love this book for me to read! This book conjures up memories of the old "Hardy Boys" series where relationships and friendships were an important part of growing up. In an age where kids today interact more through social media then face-to-face contact, this book brings you back to the basics of friendship and family. The loyalty that Ben Slovak has for his friend and main character Griffin Bing, aka "The man with the Plan", is admirable. The plan that Griffin puts together to right the wrong that was done to him by an adult store owner is ingenious. Of course, keep in mind that this is a fiction/adventure story and you must take the leap of faith and enjoy the ride. Griffins understanding that, in order to carry out his rather elaborate plan, it would require a very special team. From his school acquaintances, he recruits the proper people for the jobs at hand; a "dog whisperer", a rock claiming expert and I especially liked the way he includes a high-tech, loner nerd girl. Her involvement was the first time she was ever a part of a team and this established a level of confidence and acceptance that she had never experienced before.
Please remember that this is a fiction/adventure story and I do not advocate kids planning and carrying out major heists. But this book teaches the value of friendship, planning, team work and follow through of a plan as a valuable life lesson. Besides that, it was fun to read.

A well-written, fast-paced enjoyable page-turner

Gordon Korman has been around for what? 30 years at least and the guy still knows how to write. SWINDLE comes across like an OCEAN'S ELEVEN or MISSION IMPOSSIBLE for kids.

Griffin Bing is "The Man with a Plan," and his plans are often huge. The book starts off with Griffin's plan to spend a night with a bunch of his classmates in a creaky, old, rumored-to-be-haunted, ready-to-be-torn-down house, a plan that doesn't exactly come off with a bang. At least not the one he intended. The only person to show up is Ben Slovak, the runt of the sixth grade and Griffin's best friend. The first part of the book is intended to draw in youthful readers with gory tales and details of gruesome events that allegedly took place in the house. It works. I've read a few negative comments that the author endorses lying to one's parents and like sentiments. Korman doesn't endorse such behavior; he uses it to create characters. The book is not intended to be hagiography. Find me a child who's never lied to his/her parents. Find me a parent who's never lied to her/his child. Santa Claus, anyone?

Anyway, without giving much of the plot away, Griffin finds something quite valuable in the house, but is quickly swindled out of it by a slimy "antiquities" dealer. So Griffin has to concoct another scheme to get his treasure back. Kudos to Korman for his pacing. With a hundred pages to go, the master plan is already being implemented. "How's he going to stretch this thing out that far?" I wondered. But he does, with surprises, twists, screwups, and backstabbings that pop up at breakneck speed throughout the long, climactic event.

Of course, much of the overall premise is ludicrous, if you're going to get technical. Everything is timed to the second; missteps can be corrected within two pages, a bad guy's hands are within inches of a treasure right as the good guys steal it away with a Batman or James Bond like device. Real life isn't like this. But this is not written as a realistic crime thriller. It's written for kids and the main thing that will attract them is the fast-paced action in which kids outwit adults. Any of your typical bank heist movies could use whizzes like these. And in the end, good triumphs over evil, Griffin saves the day (though inadvertently), and kids have devoured an entertaining read.

I did have some problems keeping all the characters apart at times, but Korman helps by assigning one or two distinctive traits/talents to each character, kind of like a baseball scorecard might assign positions to players. One girl is the climbing expert, another is an "animal whisperer," another has narcolepsy, etc. I also commend him for salting the early part of the story with details that will become important later on.

So SWINDLE may not be chock full of vitamins for kids, but it is a very enjoyable bowl of popcorn, perfectly seasoned. If I had this book in sixth grade, I would have loved it.

Published in 1949, shortly after the author's death, A Sand County Almanac is a classic of nature writing, widely cited as one of the most influential nature books ever published. Writing from the vantage of his summer shack along the banks of the Wisconsin River, Leopold mixes essay, polemic, and memoir in his book's pages. In one famous episode, he writes of killing a female wolf early in his career as a forest ranger, coming upon his victim just as she was dying, "in time to watch a fierce green fire dying in her eyes.... I was young then, and full of trigger-itch; I thought that because fewer wolves meant more deer, no wolves would mean hunters' paradise. But after seeing the green fire die, I sensed that neither the wolf nor the mountain agreed with such a view." Leopold's road-to-Damascus change of view would find its fruit some years later in his so-called land ethic, in which he held that nothing that disturbs the balance of nature is right. Much of Almanac elaborates on this basic premise, as well as on Leopold's view that it is something of a human duty to preserve as much wild land as possible, as a kind of bank for the biological future of all species. Following the seasons, Leopold, whose seminal work in the U.S. Forest Service and in books and magazines helped shape the conservation movement in this country, shared his perceptive and carefully observed portraits of nature month by month. In April, he watched the "sky dance" of the woodcock, who flew upward in a series of spirals. As he hunted partridges in October, his way was lit by "red lanterns," the blackberry leaves that shone in the sun. A November rumination details how the products of tree diseases provide wooded shelters for woodpeckers, hives for wild bees and food for chickadees. Included also is an appreciative essay on wild marshland and several pieces stressing the importance of protecting the natural environment. Leopold sadly observed, "there is yet no ethic dealing with man's relation to land and to the animals and plants which grow upon it." His hope that society would develop an "ecological conscience" by placing what should be preserved above what is economically expedient remains relevant today. These evocative essays about the farm Leopold loved will again be enjoyed by nature lovers and preservationists alike. Though the book has been continuously in print, this beautiful illustrated edition, with its introduction by nature writer Brower (The Starship and the Canoe) will attract fans and newcomers and will make a great gift book this holiday season.

If I could carry only one book with me for the rest of my life ...

I was first introduced to this book about 40 years ago, as a sophomore taking a seminar in the Marine Biology undergrad program at UNC-Wilmington. Up until reading that book, I had been somewhat less-than-motivated by typical college books and courses. But soon after opening the first pages, I knew I had stumbled upon something special. This was my first peak into the window of a qualitative approach to the sciences, ecology, the philosophy of science, and then philosophy proper.

I later spent a few summers fighting mountain fires in Arizona, and then I went on to become a college professor myself, spending over 30 years in Japan teaching everything from biology labs, freshman writing, and public speaking at Temple University Japan, and then an even wider variety of courses in my tenure at Jissen Women's College.

Half a life time later, and half a world away in this digital maze of Tokyo, this is still the book that brings me back to those once clear, star filled skies, the distant splash of a black bass, and a morning cup of coffee around the campfire. This is the book that reminds me — an earth lives beneath my feet, and inspires poetry in anyone who takes the time to slide back into the slippers and boots of Aldo Leopold ... a stylist and thinker for the ages, and a voice that reminds us of not only the importance of a quality life, but also the threats to our sustainability as a species.

I am writing this review only now because I treasure this book so much, I have bought several copies for friends in Japan and China. We are not so different as the media and marketing experts would have us believe.

Enduring Conservation Classic

I just finished reading this conservation classic and I have to confess, I approached it with some trepidation. Knowing it is a beloved and enshrined text of environmentalists, from moderate to fanatical, I feared it might be more polemical than inspiring, more Al Gore than Henry David Thoreau, but was happy to find this fear misplaced. The text was left to the world in draft from when the author died tragically in 1948, helping a neighbor fight a wildfire. It was first published by his son in 1949, and in this reorganized edition in 1966.

First, some information about Leopold himself. He was born in Iowa in 1887 and was educated at Yale before joining the Forest Service in 1909, serving in New Mexico and Arizona. He became one of the founders of the Wilderness Society and in 1924 formed the first wilderness in the Forest Service, the Gila National Forest. Then followed a long tenure as a professor at the University of Wisconsin at Madison. He writes with the brilliance of a science professor, the passion and soulfulness of a sentimental farm boy, and the messianic zeal of a visionary reformer who sees more deeply into things than most people can.

This book is actually four slim books “welded together”, as the author says. The first part is the month-by-month almanac that that gives this present form of the book its title. The author takes the reader on a dazzlingly observed personal tour of his life and farm in Sand County, Wisconsin and we willingly accompany him on this warm and insightful narrative journey. Here, for example, is a sample of a couple throw-away lines from October: “Lunch over, I regard a phalanx of young tamaracks, their golden lances thrusting skyward. Under each the needles of yesterday fall to earth building a blanket of smoky gold; at the tip of each the bud of tomorrow, preformed, poised, awaits another spring.” He writes feelingly about the death of the last carrier pigeon, the last jaguar in Baja, the last grizzly to be killed in Arizona, his regret to kill a mother wolf and watch as the green light died out in her eyes; each death and each extinction diminishes us profoundly, for we are integrated into a world that we are ourselves diminishing.

The second part of the book “The Quality of Landscape,” is a series of essays about places. The most hauntingly beautiful is “Chihuahua and Sonora,” an amazing report of his canoe voyage with his brother among the channels and lagoons of the Colorado River’s delta in Baja in 1922. Then it was a fabulously rich environment, teeming with wildlife and abundant flora. Now, of course, the great river has been dammed, managed, and consumed by the thirsty and growing populations of the southwest, so much so that the river never even reaches the Gulf of Baja now and all that fabulous world of flora and fauna has vanished. Leopold: “Man always kills the thing he loves, and so we the pioneers have killed our wilderness. Some say we had to. Be that as it may, I am glad I shall never be young without wild country to be young in. Of what avail are forty freedoms without a blank spot on the map?” And here is another pellucid throw-away line in the essay “Manitoba”, about swans observed in a marsh: “A flotilla of swans rides the bay in quiet dignity, bemoaning the evanescence of swanly things.” We may all bemoan the evanescence of swanly things.

The third part of the book is called “A Taste for Country” and it comprises a series of essays that are about things and ideas, rather than about places. In it, Leopold declares himself a conservationist. The difference between a conservationist and a preservationist is that the latter emphasizes excluding man from wild places, while a conservationist aims to make wise use of all natural resources, a range of uses that includes wilderness as one important value among many others. Indeed, the very word comes from the Latin verb conservare, which means “to make wise use of.” Here is Leopold: “Conservation is a state of harmony between men and land. By land is meant all of the things on, over, or in the earth. Harmony with land is like harmony with a friend; you cannot cherish his right hand and chop off his left. That is to say, you cannot love game and hate predators; you cannot conserve the waters and waste the ranges; you cannot build the forest and mine the farm. The land is one organism. Its parts, like our own parts, compete with each other and co-operate with each other.” And then later he adds: “What conservation education must build is an ethical understanding for land economics and a universal curiosity to understand the land mechanism. Conservation may then follow.”

The final part of the book is a section called “The Upshot,” which is Leopold’s attempt to propose an action agenda that is under-pinned with ethics. It reads a bit dated now, having been formulated in the aftermath of the Dust Bowl of the 1930s and at the dawn of the conservation era when advocates hardly even had a vocabulary for the new school of policy they were trying to form. And yet in some ways it is still fresh and interesting. Here is Leopold in an essay called “The Land Ethic,” writing about how disputes about conservation always cleave the disputants into two groups: “In all of these cleavages, we see repeated the same basic paradoxes: man the conqueror versus man the biotic citizen; science the sharpener of his sword versus science the searchlight on his universe; land the slave and servant versus land the collective organism.”

Here is a great idea for the curious and open-minded student. Go read Thoreau’s masterpiece Walden (1854); then read Rowland’s Cache Lake Country: Life in the North Woods (1947); finally read Leopold’s A Sand County Almanac. It will be a wonderful voyage of discovery and a first class education in the transcendental ethics of wild America.

Missing Round River

The Kindle edition is missing many chapters found in the MM paperback edition (Part III, A Taste For Country is almost entirely missing, and Part IV is combined with a small portion of what part III is in this edition). Since this is a text for class, and a good read besides, I am quite disappointed. Aldo Leopold and the book itself would get a 5 star rating. This edition however, leaves much to be desired.
